Development of Thickened Beverages for Treatment of Dysphagia

Dr. Hartel, from the University of Wisconsin-Madison, will visit USU and talk about his latest USDA funded grant entitled "Development of Thickened Beverages for Treatment of Dysphagia."
Commercial thickened beverages have been developed essentially by trial and error. Can we guide formulation of thickened beverages for treatment of dysphagia through an understanding of the rheological properties of the fluid? In this study, we are exploring how the non-Newtonian behavior of thickened fluids influences the sensory perception of thickness.
This seminar will be held in the Western Dairy Center Conference Room (248g) Nov. 6, 2009, at 10:30 a.m. Refreshments will be served.
