Mashed Potato Make-overs
Add a beaten egg and 1 tablespoon of flour to 2 cups leftover mashed potatoes.
Then stir in some chopped onion and shredded cheddar cheese. Shape into thin
patties and cook in a skillet over melted butter. Brown on both sides.
Combine leftover mashed potatoes with chopped onion and shredded cheese, then bake.
Split hotdogs lengthwise. Stuff with leftover mashed potatoes; top with cheese and paprika, then bake.
Simmer chopped onions and celery in butter until tender. Stir in leftover mashed potatoes and enough milk to make a broth. Heat the mixture, then top this tasty soup with crumbled bacon and shredded cheddar cheese
Baked Potato Cover-Up
Cut leftover baked potatoes lengthwise into quarters, dip in
melted butter, roll in parmesan cheese, then bake at 350º for about 20
minutes or until theyre golden and crispy.
Rice Rerun
Combine leftover rice with an undiluted can of cream of mushroom soup. Spread
the mixture into a casserole dish, top with a can of green beans, and bake until
hot.
Taco Turnaround
Warm leftover taco meat in the skillet and add flour to form a paste. Stir in
milk to make a savory gravy and serve it over biscuits.
Chili Comeback
Put corn chips on plates, spoon warmed leftover chili over and garnish with
shredded cheddar cheese and diced tomatoes, avocados, and green onions.
