Anitimicrobial potential of enzyme modified peptides

Project Summary:

We hyothesize that the specific enzyme treatments used making whey produces specific compounds that are antimicrobial (bacteriostatic or bactericidal) or inhibits microbe binding to host tissue.  The antimicrobial effect will be determined at the onset of this project.
