Kevin developed a passion for the culinary industry when he took a summer job as a restaurant dishwasher. He fell in love with the restaurant crew and the 'pirate lifestyle'. He worked his way up the ladder there for 7 years, then decided to attend culinary school at Le Cordon Bleu Culinary School in Scottsdale, AZ. 

He has now worked in the culinary industry for the past 22 years and has gained inspiration from his favorite cook, Chef Anthony Bourdain. 

How to Make Homemade Kimichi With USU Chef: Kevin King

Ingredients:
1 Large head of Napacabbage
2 Tbsp.kosher salt
½ cup plus
2 Tbsp.sugar
20 cloves minced garlic
20 slices minced ginger
½ cup gochugaru (Korean chili flake) (You can use Korean chili paste, if flakes aren’t available, or combination of the two.)
¼ cup fish sauce
¼ cup light soy sauce
2 teaspoons of dehydrated salted shrimp(find this in the Mexican spices section at grocery store: camarones) or substitute with bonito hondashi (fish powder) for shell fish allergies.
½ cup 1inch pieces of green onions (greens and whites)
½ cup shredded carrot pieces


How to Make Homemade Banana Foster With USU Chef: Don Donaldson

Don is originally from New Jersey, but has lived in Cache Valley for the past 13 years. Don attended culinary school at the Atlantic County Culinary Academy in New Jersey. He has been in the culinary industry for just over 34 years. Don decided to become a chef when he discovered his love of cooking food......and also because he needed a job. 

Chef Don respects and looks up to Chef Joe Romanowski (AKA: Joey Romo). Joe was an old school chef who expected greatness and for his employees to keep up with him. His flavors were bold and he ran his line smooth, even at the height of a busy service.

Don and Joe always had a good time doing what they loved and Don was inspired by his leadership. Don currently serves in the position as Head Chef of The Junction, and is also the culinary mind behind all of the menu's throughout Retail Dining at USU. He has worked in Dining Services for 13 years. His favorite food to prepare always depends on the day or the season.
